Couscous:
Organic whole grain wheat delicately steamed in special broth.
- Traditional Couscous: Steamed couscous piled high on a platter, served with winter vegetables such as turnips, parsnips, carrots, eggplant. Vegetarian or with lamb.
- Couscous Salad: Cold couscous with golden raisins, dried apricots, dried cranberries, green olives and almonds.
Appetizers and Sides:
- Bastilla: A savory-sweet phyllo pastry with almonds, eggs and spices and your choice of filling: fruits, all vegetable, or chicken with vegetables. Squab or quail is available by special request.
- Carrot Salad: Shredded carrots with orange juice, cinnamon and raisins
- Spicy Greens: A mix of kale, broccoli leaves, mustard leaves and beet greens, steamed and served with a spicy pepper dressing
- Tomato Salad: Diced tomatoes with roasted peppers, shallots, garlic and ginger dressed with cumin and olive oil
- Mixed Greens: Salad with radicchio, radishes and tomatoes, served with a citrus vinaigrette
- Cucumber Salad: Diced cucumbers with dill-citrus vinaigrette
- Potato Salad: Potatoes with olive oil, lemon, and celery
- Home-made hummus dip, served with pita bread
- Smoked salmon and cream cheese spread with diced green or kalamata olives, served with pita bread
All meals served with wheels of traditional Moroccan bread or French-style baguettes
